( Goat and beans )
Ingredients: 1kg goat, 1 big red onion, 250g of dried white beans (I employ the extraordinary ones from Badalucco), 1 bottle of red wine, 2 cloves of garlic, 1 sprig of thyme, 1 sprig of laurel, chilli, salt and pepper. |

Chop a nice red onion and a couple cloves of garlic, along with thyme and laurel. Sautè it all with a little extra virgin olive oil .
Add 1kg goat cut into small pieces and brown for about fifteen minutes. Cover with some good red wine.
Add half a pound of dried beans, soaked in warm water the night before, add salt and little chilli pepper. Cook for a couple of hours on very low heat. Amazingly good!
