"The only weapon I tolerate is a corkscrew."
– Jean Carmet
Our wine list is the result of a personal journey, shaped by tastings, encounters and deliberate choices. It is not meant to be an endless catalogue, but a curated selection where every bottle has something to say.
We begin, naturally, with Liguria. The western Riviera brings Vermentino, Pigato, Rossese, Ormeasco and Granaccia to the table: wines that are often more about finesse than power, able to accompany the cuisine without overpowering it. Moving east, the Colli di Luni offer broader whites, more structured reds and a few historic labels that reflect the natural dialogue between Liguria and Tuscany.
Piedmont plays a central role, from Dolcetto of Dogliani to Barbera from Nizza Monferrato, all the way to the great Nebbiolo of Barbaresco and Barolo. Alongside the classics, you will also find less obvious grapes such as Ruché, Pelaverga, Timorasso, Erbaluce and Arneis: small territories, each with a distinct voice.
The selection continues through Valle d’Aosta, Oltrepò Pavese, Valtellina, Trentino-Alto Adige, Friuli, Veneto and Tuscany. Different regions, chosen not to fill the list, but to complete it: sparkling wines, mineral whites, skin-contact wines, mountain reds, more structured expressions and a few older vintages in limited availability.
We also include wines from Marche, Umbria, Puglia and Sicily, together with a small French selection, mainly for those looking for mature bottles, Bordeaux and more classic profiles.
To finish, we offer a selection of sweet wines, passito, fortified and botrytised styles, chosen to pair with desserts and cheeses. And, to close the experience, a range of spirits: grappa, brandy, cognac, whisky and rhum agricole.
A wine list built without following trends, guided by curiosity and balance. Liguria at the centre, Piedmont as a key reference, and everything else as a journey.
