Jacopo Salis, the fifth generation of this family of restaurateurs, is a man who has embraced his legacy with determination and vision. The son of Mariachiara and Alessandro, Jacopo has taken the reins of the restaurant, imprinting it with his personality and innovative ideas.

His philosophy centres on reinterpreting ancient flavours through the skilled use of modern techniques and tools. This vision is masterfully executed by the Chef, with whom Jacopo shares a deep friendship and mutual respect.

In the dining room, Jacopo has introduced a more refined and modern style of service, paying meticulous attention to detail. As a sommelier, he has devoted significant care to the wine cellar, renewing and expanding the wine list year after year. By pairing boutique wineries with historic names in the industry, Jacopo has curated a diverse and eclectic selection.

Jacopo loves engaging with guests, speaks both English and French, and passionately advises diners at their tables, offering expert recommendations on menu items and perfect wine pairings to enhance their experience.

In his free time, he tends to the Tenuta di Meregone, which he manages alongside his uncle Andrea, supplying the restaurant with zero-kilometre, locally sourced ingredients.

Visionary and always looking to the future, Jacopo Salis is continually striving for improvement – for himself and for the restaurant that proudly represents his family and their remarkable history.
